Our process focuses on purity.
Ultra-Premium Spirit makers discard more of the heads and tails of distillation.
This process is more expensive but when consumers pay a premium, they are buying purity.
It makes the spirit smoother and prevents some of the natural bitter elements from getting in the liquid.
We do not use any artificial colors, yeats, flavors, or additives.
The process from harvest to bottle takes approximately 4 weeks working day & night and the whole process from Agave to bottle can take up to 9 years.
It is true craftsmanship at its finest.
Agave Espadín, Angustifolia haw
The first step in creating lord diego mezcal is using the finest prime material, agave.
We hand select only the finest Agave at the peak of their maturity (7-9 years) to ensure optimal levels of flavor and character.
The Agave is 100% Single Estate Agave Espadín made in the rich soil and tropical savanna climate of Oaxaca, México.
Underground Roast Oven
The Agave is cooked in a slow, intricate roast process in an underground Earth oven lined with rock and wood-fired.
The agave is kept in the oven 5-7 days depending on the season.
Tahona Wheel
The Agave is crushed with a stone wheel to prepare for fermentation.
Fermentation
The crushed Agave fibers and liquid is placed in open air oak wood vats with natural spring water.
It is fermented naturally by the wild ambient yeast in the air and pure, natural spring water, for 5-9 days depending on season.
Copper Still Distillation 2x
The liquid and fibers from fermentation are then masterfully distilled to extract the pure liquid in
traditional copper pot stills 2x to produce a clean and smoky smooth Mezcal.
